  1. Inspect and clean celery leaves - remove any brown or damaged leaves, keeping only the freshest, most vibrant ones. Pink celery leaves create the most beautiful salt.
  2. Wash gently in cool water and spin completely dry in salad spinner - this step is crucial for proper dehydration.
  3. Pat leaves thoroughly dry with clean kitchen towels. Any residual moisture will prevent proper dehydration and could lead to spoilage.
DEHYDRATE (4-8+ hours)
  1. Arrange leaves in single layer on dehydrator trays or parchment-lined baking sheets. Overlap will create uneven drying.
  2. Dehydrator method: Set to 95°F (35°C) for 4-6 hours until leaves are completely crisp and crumble easily.
  3. Oven method: Set to lowest temperature (170°F/75°C) with door slightly ajar, 2-4 hours until crisp. Check frequently to prevent browning.
  4. Test for doneness - leaves should crumble easily between fingers with no moisture remaining. Properly dried leaves will sound papery.
BLEND
  1. Cool completely before processing to prevent condensation in your processor.

STORE
